The business programme will include impressive Culinary Workshops that spotlight the best of British produce and provide key insights into skills and techniques being used in some of the top kitchens in the UK.
WORKSHOP CHEFS IN 2025
GARETH WARD
Gareth Ward’s two-Michelin-starred Ynyshir restaurant-with-rooms is in the Welsh countryside, and he is cited as one of the most exciting chefs in the UK today. The restaurant offers a multi-layered menu that is unlike anything else in the world, full of rich flavours that combine Japanese techniques and flavours with many Welsh ingredients.
Michael Wignall, Chef Patron of The Angel Inn at Hetton delivers food that wows on every plate. His ever-evolving style creates unique dishes full of flavour, underpinned by a contemporary, less formal approach to fine cuisine. In addition to the coveted Michelin Star, The Angel Inn has been presented with five AA rosettes.
MICHAEL WIGNALL
ADAM SMITH
Birmingham born Adam won the Roux Scholarship in 2012, aged just 24-years old. In 2016, Adam joined Coworth Park as Executive Chef and now leads a team across three sites including the Michelin-starred Restaurant Woven by Adam Smith. In 2024, Adam cooked his fish dish at the Great British Menu banquet in Paris.
MARTIN ECCLES
Martin provides butchery information to the multiple retail and foodservice sector, and works closely with the AHDB events team to provide butchery demonstrations. He also assists in product development information and development of the meat education programme.
TOM BOOTON
Having entered the world of professional cooking at the age of just fifteen, Tom Booton has gone on to become one of the UK’s most exciting chefs. In 2019, he became the youngest head chef in The Grill at The Dorchester’s history.
LEWIS WILSON
Lewis Wilson is the Head Pastry Chef at the prestigious Ritz hotel in London where he, with his team, creates amazing desserts. Starting at the bottom and working his way up, he now oversees a team of 18 pastry chefs. Previously Lewis worked at Deca with Nico Ladenis and Mirabelle with Marco Pierre White.
CHEF’S PANEL 2025
The business programme for 2025 will conclude with a panel of chefs chaired by Joe Hurd.
JAMES GOULDING
James is the Head of Food Education for the Prept Foundation who are focused on helping to inspire a new generation through food. James was previously the Chef Director of the Pig Hotel Group and he is also a regular presenter on TVs Sunday Brunch.
LOUISA ELLIS
From culinary college to the kitchens of multi-rosette hotels and Michelin-star restaurants, Louisa is an inspiration to many. She was a champion on BBC's MasterChef: The Professionals and also participated in Great British Menu 2024.
TIM ALLEN
Tim opened sō-lō in 2021, after receiving accolades in all the major guides. The restaurant has been met with critical acclaim and was awarded a Michelin Star in 2023.
