The business programme will include impressive Culinary Workshops that spotlight the best of British produce and provide key insights into skills and techniques being used in some of the top kitchens in the UK.

WORKSHOP CHEFS IN 2026

KATE AUSTEN

In 2024, Kate competed on Great British Menu, becoming the first woman in the show’s history to win the main course. Prior to that she worked for Gordon Ramsay as a senior development chef. Kate worked in Copenhagen at the 2 Michelin Starred Restaurant AOC, where she became the youngest female head chef of a 2 Michelin starred restaurant in the world.

Ian Musgrave is Executive Sous Chef at The Ritz London. He was named UK’s Bocuse d’Or candidate after winning the national selection in 2019. Under his leadership Team UK won the “Theme on the Plate” prize and and went on to secure a top10 finish in the 2023 world final. Ian is noted for his precision, classical technique with modern touches and his role elevating British cuisine on the international stage.

IAN MUSGRAVE

HARRY VAN LIEROP

Harry worked at L'Enclume, where he spent was part of the team that achieved the restaurant’s third Michelin star. Harry now works at The Ledbury and is part of a team that helped the restaurant go from two to three Michelin stars. After moving to London, Harry was selected to represent the UK as commis chef for Bocuse d'Or Team UK.

MARTIN ECCLES

Martin provides butchery information to the multiple retail and foodservice sector, and works closely with the AHDB events team to provide butchery demonstrations. He also assists in product development information and development of the meat education programme.

OLLIE BRIDGEWATER

Ollie Bridgwater is the Executive Chef at SOURCE, the Michelin-starred restaurant at Gilpin Hotel & Lake House in the Lake District.
His style emphasises locally sourced produce, nose-to-tail principles, and minimalist elegance in presentation—each dish tells a story.

The business programme for 2025 will conclude with a panel of chefs chaired by Joe Hurd.
